often have it for lunch on weekdays as well as it’s one of my favourites. The combination of egg and avocado means you will feel full for hours afterwards, and is perfect for replenishing protein, carbohydrate and essential fat levels after a good exercise session.

Ingredients (for 2 people)

2 large organic eggs

1 avocado, peeled and slices

1 red chilli, chopped small

Handful of cherry tomatoes, chopped small

125 gms feta, crumbled

3 spring onions, chopped small

Sourdough bread

Extra-virgin olive oil

Pepper

Break the eggs separately into two cups so they warm up to room temperature

Bring a pan of water to a low boil

Prepare all the ingredients

Toast the bread

Poach the eggs

Generously pour olive oil on the toasted bread and then pile high with the other ingredients

Grind over some pepper and serve.
