1 can chick peas, plus some of the water from the tin
4 medium sized beetroot, roasted or boiled (Roasted gives a slightly better flavour, I think!)
2 tbsp tahini
5 tbsp lemon juice
2 tbsp olive oil
1 clove garlic
Salt and pepper to taste
Blitz the beetroot and garlic in a blender and then add the other ingredients until you get the desired consistency and taste. You can experiment with adding some cumin, or lemon zest if you like those tastes.
