1 head cauliflower
2 tsp Coconut oil
Cut the cauliflower into florets and rinse. Place half the florets into the Magimix and grind until small, rice-like pieces. Repeat with the other half. You can either have the rice completely raw, like this, but if you prefer (like I do) you can also soften it a bit by sautéing in the coconut oil.
Cauliflower rice can either be used on its own, just like normal rice, or mixed in with normal rice. It goes brilliantly with coconut milk based sauces, but experiment with others and let me know how you get on!
