An easy savoury flapjack recipe. Great as a snack or as an alternative to sandwiches. Oats are a slow release carbohydrate and beneficial for gut bacteria.
Prep time: 15 minutes Cook time: 30 minutes Serves: 12
2 eggs, beaten
2 oz. butter (or coconut oil), melted
5 oz. porridge oats (choose gluten free if avoiding gluten)
5 oz. cheddar cheese, grated
1 large carrot, peeled and grated
2 tbsp. seeds (or mixture of pumpkin/sesame/sunflower)
Sprinkling of Parmesan cheese (topping)
Preheat the oven to 180˚C / 350˚F / Gas Mark 4.
Place a piece of baking parchment into your baking tin.
Put the oats into a mixing bowl with melted butter.
Add the cheese, seeds, eggs and carrot to the oat mixture and mix until well combined.
Pour the mixture into the baking tin and gently flatten using the back of a spoon. Sprinkle lightly with Parmesan.
Cook in the centre of the oven for 25-30 minutes, until lightly golden. Allow to cool for a little in the tin before slicing
