This is a tasty and filling soup, with the immune busting properties of turmeric and ginger, alongside some hormone-friendly celery and energy providing sweet potato. What’s not to like?!
10ml/2 tsp coconut or olive oil
1 onion, chopped
2 cloves garlic, chopped small
1 large head celery, roughly 700gms, chopped
2 tsp freshly grated peeled ginger
1/2 tsp ground turmeric
2 tsp ground cumin
1/8 tsp ground cinnamon
1 med/large sweet potato, peeled and chopped
1 med potato, peeled and chopped
1 litre vegetable stock
1 bouquet garni
Freshly ground salt and pepper to taste
Heat the oil in a large saucepan, over a medium heat. Add the onion, garlic and celery, cover and cook gently, stirring occasionally, for about 10 minutes.
Add the spices and stir to cover the vegetables for a couple of minutes.
Add the potatoes, stock, bouquet garni, cover and bring to the boil. Simmer for about 20 minutes, until the vegetables are tender, but not too soft.
Remove the bouquet garni and allow the soup to cool slightly before processing in a processor or blender.
Taste and season with salt and pepper. Serve.
