A great way to use a cheap vegetable that’s in season right now. And they taste even better the next day, when the chilli really starts to come through
This is the recipe I was taking about on tonight’s live, where we discussed how eating healthily doesn’t have to be expensive.
* 1 swede, peeled and diced into small chunks
* 75 g gram flour
* 100ml plain yoghurt
* 1 egg, beaten
* 1 red chilli, chopped fine
* 1 tsp cayenne pepper
* 2 tsp garam masala
* 1/2 tsp ground turmeric
* Small handful chopped fresh coriander
* Coconut oil, for frying.
Cook the swede in a pan of boiling water for about 15 minutes until tender. Drain well. In a large bowl, mix together all the other ingredients and season well with salt and pepper. Mash the swede and stir together.
Heat the coconut oil in a pan and shape small patties of the mixture. Fry over a medium heat for about 5 minutes each side. Enjoy!
