Half a packet of dried wakame. (Packets weigh about 50 gms, and will serve about 6 people as a side salad)
50 ml sesame oil
30 ml soy sauce or tamari
50 ml peanut, or vegetable oil
15 ml rice wine vinegar
20 ml tamarind paste
60 ml honey
2 cloves crushed garlic
1 red chilli deseeded and chopped small
Small handful coriander roughly chopped
Place the seaweed in a large bowl and cover in hot, but not boiling, water. Soak for 5 minutes until fully expanded, drain and squeeze out any excess moisture.
Mix all the other ingredients together and toss with the seaweed. This looks quite nice with some light coloured seeds or chopped nuts on top.
