I call this a winter salad, only because I tend to think of fennel and orange as wintery ingredients. They’re not, of course, and this is a great dressing that goes well with many other salad combinations, or with tuna and seabass if you’re a fish eater.
Serves 4 as a side
1 small bag rocket salad
1 large bulb fennel, thinly sliced
2 carrots, peeled into ribbons using a vegetable peeler
1 large orange, segmented
Handful sliced almonds
Handful mixed seeds (I suggest sunflower and sesame)
1 tsp wasabi paste
50 ml extra virgin olive oil
Any extra orange juice saved while you’re segmenting the orange
Prepare all the vegetables. Mix the dressing until smooth.
Combine, dress and serve.
